Our story

The coast solved this problem four generations ago

Long before refrigeration, families along the Tamil Nadu and Kerala coast had one question: how do you keep the sea’s catch good for the weeks the boats are away?

The answer was never a chemical. It was sesame oil, spice roasted and crushed that morning, and a final splash of coconut vinegar, fermented from coconut water. That vinegar is the reason a bottle could sit on a shelf and still be worth opening a month later.

Whole spices dry-roasted and crushed on the day. Nothing is bought pre-ground.

Deboned by hand, then slow-dried

The fish is checked by hand and dried before it ever meets a pan. That is what makes it cook dry.

The method

Five steps, in this order, every batch

The order matters more than any single ingredient. Change it and the pouch will not keep.

Step 1: whole spices dry-roasting in an iron pan

Mustard seeds and asafoetida into hot sesame oil until they pop. Onion, ginger and garlic follow.

Why these go together

Nothing on the list is decorative. Each pairing does a job in the pan. Here is what each one is actually for.

Sesame oil + asafoetida + cumin

The base every coastal kitchen starts from. The oil also seals the finished mix.

Black pepper + ginger + garlic

The backbone of the heat. Sharp rather than merely hot, so it still works with plain rice.

Fennel + coconut vinegar

The sweet-sour finish. The vinegar goes in last, off the heat, and does the keeping.

Groundnut + sesame seed

Yes, and the reason is that there is almost no water left in it. Everything is cooked dry on high heat, sealed in sesame oil, and finished with coconut vinegar, which is acidic. That combination is how coastal households kept fish for weeks before refrigeration existed.

No. It is ready to eat straight from the pouch. Most people spoon it onto hot rice and let the heat of the rice do the work, but it is just as good cold in a sandwich or a chapati roll.

Medium across the range, with the Prawn a little hotter than the rest. The heat comes from black pepper and red chilli rather than raw chilli powder, so it is sharp rather than blunt. It sits with plain rice instead of overwhelming it.
